SOIL: Medium-textured, clay schist
BLEND: Chardonnay 100%
TIME OF PLANTING: 1984
YIELD PER HECTARE: 60 q\ha
TRAINING SYSTEM & DENSITY: Guyot, 3000 vines per ha
CONTROL & DEFENSE SYSTEMS: Integrated Pest Control, minimal environmental impact.
HARVEST: 3rd\4th week of August. Grapes are sorted and harvested by hand, and transported in small baskets.
MUST EXTRACTION: Grapes are de-stemmed and softly pressed in a refrigerated pneumatic press. The must remains in maceration at a cold temperature for a few minutes.
CLARIFICATION: natural sedimentation in refrigerated stainless steel tanks (8 °C).
FERMENTATION: in Stainless Steele Tanks at controlled temperature (12-18 °C).
MATURATION: Sur-lie with daily stirring, for 30\40 days after the end of fermentation. Then the Wine is moved to a different stainless steel VAT, where it ages for the rest of the wintertime.
AGEING: 2 months in bottle.
ALCOOL: 13.0 %
RESIDUAL SUGAR: dry
TEMPERATURE OF SERVICE: 10 °C
EYES: Bright straw yellow.
NOSE: Floral, with many hints of white, citrus and tropical fruit.
MOUTH: Fresh and extremely rich, zesty, sapid.
