CONTROL & DEFENSE SYSTEMS: Integrated Pest Control, minimal environmental impact.
HARVEST: Last week of August/ first week of September. Grapes are sorted and harvested by hand, and transported in small baskets.
MUST EXTRACTION: Grapes are de-stemmed and softly pressed in a refrigerated pneumatic press. The must remains in maceration at a cold temperature for a few minutes.
CLARIFICATION: natural sedimentation in refrigerated stainless steel tanks (8 °C).
PRIMARY FERMENTATION: in Stainless Steele Tanks at controlled temperature (14-18 °C).
SECONDARY FERMENTATION: in an autoclave, at controlled temperature (metodo Charmat-Martinotti).
MATURATION: 2 months on the fine lees.
ALCOOL: 12.0 %
RESIDUAL SUGAR: Brut
TEMPERATURE OF SERVICE: 6\8 °C
EYES: pale straw yellow, with green reflexes. Fine and persistent perlage.
NOSE: Small flowers, melon, pear. Hints of acacia honey.
MOUTH: Very fresh and perfectly balanced, with creamy bubbles and a subtle, pleasant sweet finish
