CONTROL & DEFENSE SYSTEMS: Integrated Pest Control, minimal environmental impact.
HARVEST: Last week of August until 2nd week of September. Grapes are sorted and harvested by hand, and transported in small baskets.
MUST EXTRACTION: Grapes are de-stemmed and softly pressed in a refrigerated pneumatic press. The must remains in maceration at a cold temperature for a few minutes.
CLARIFICATION: natural sedimentation in refrigerated stainless steel tanks (8 °C).
FERMENTATION: in Stainless Steele Tanks at controlled temperature (14-18 °C). All varieties ferments in separated tank.
MATURATION: 2 months on the fine lees. In spring, the final blend is assembled in a new tank, and shortly after the wine is bottled.
ALCOOL: 13.0 %
RESIDUAL SUGAR: Dry
TEMPERATURE OF SERVICE: 8\10 °C
EYES: pale straw yellow, turns golden with ageing.
NOSE: Complex and elegant bouquet of white flowers (orange, hawthorn, acacia, peach), followed by notes of citrus, pear and green apple.
MOUTH: Delicate yet persistent, fresh and perfectly balanced. Elegant finish, with hints of balsamic fresh herbs.
PAIRING TIPS: Tuscan seasonal starters like Panzanella and Pappa col Pomodoro, Pasta with Shellfish sauces, Bouillabaisse.
